Making my oven fried potatoes for the first time in a couple of years. Slice potatoes about 1/8 in thick (washed, peeled optional) Put in greased baking dish Slice onions, top the potatoes Chop garlic, sprinkle over potatoes Add some form of oil (margarine, Olivio, butter) Put in 425-450 deg oven, Mix every 10 minutes at first, until potatoes are coated with oil. Then you can reduce to 15-20 minutes, I think When the top ones are browned, and all are soft, they are done

The official name of the place was “The Brenchley Arms”, if memory serves. Yes, memory does serve, and apparently it is still in business:
